One-Day Wine Expansion

 

In this class, we taste a dozen quality wines with some basic food items and the discussion spans everything from how to taste and evaluate wine to how to match it with food. The day starts with an introduction to wine tasting techniques, wine's taste components, and descriptors of a wine's quality. While you're tasting, you experience the different characteristics of certain grape varieties, and how they change from region to region. We cover important concepts such as appellation and terroir, point out the significant recent changes in the taste of wine, and go through the process of ordering wine in a restaurant. Then we try the wines with basic tastes such as salty, sweet, bitter and sour to see how the wines give different impressions when combined with different food groups. Finally, we evaluate them when they are paired with fine cheeses and universal dishes, and fine-tune the matching by including flavor in the process.

All questions relating to wine, and food and wine pairing are welcome in this class where you will also find out about New York's best wine shops and restaurants with great wine lists.
